The grapes from the manual harvest are unloaded and immediately destemmed and crushed. With the addition of selected yeasts, fermentation begins at a controlled temperature (26° C). During this period is made the maceration, by the process of timed assembly, which lasts throughout the fermentation period about 8 days.
